Our 48-hour cold-fermented dough is mixed daily. Our tomatoes come from sanctioned San Marzano estates. Our cheese is sourced from small dairies in Colorado and beyond. And our wood-fired oven — the heartbeat of our kitchen — runs at nearly 900°F, giving every pie that signature char and lift.
